Our soft red wheat has a medium protein. This makes it conducive for baking cookies, muffins, brownies, and other non-yeast products. Since baking with yeast requires a high protein flour, bakers use our fresh milled flour in conjunction with bread flour, or other high protein flour, to make bread, rolls, pasta, etc.

Our fresh milled flour is most nutritious because it is milled 48-72 hours prior to delivery. This preserves the vitamins and minerals that begin to oxidize upon milling. The flour, however, may be kept in a cooler or freezer for up to 3 months to help retain the nutrients.
